肉はいろいろな食べ方があるが、なんと言っても焼いて食べるのが一番だという人が多いんじゃないだろうか。僕もそう。炭火なんかで焼くと最高だ。ただ、本当にうまい店だと、冷凍をそもそもしていないため、なんと生で食える。これが実は一番おいしい食べ方なんじゃないだろうか。早い話、肉の刺身である。
肉はブランドや産地にこだわってもいいが、僕の場合、重視するのは鮮度だったりする。しかし生は下手なブランドものより高くてなかなか口にできないのだ。ブランドといえば、最近は豚でも鹿児島の黒豚以外に、「もち豚」や「東京エックス」などさまざなブランドができ、おいしい肉だということをアピールしている。
肉は白いごはんによく合う。こんがりと焼いた牛カルビやハラミ、コプチャンなどは、ビールなどよりごはんが合う。ごはんをおかずにしていると言っても過言ではないだろう。ただ、白いごはんばかり注文してしまうと、クッパや石焼ビビンバなどのごはんもののサイドメニューが頼めないのが、肉を食べるときの悩みか。
